Awadhi Rasoi: A Celebration of Awadhi Food at PAL Heights Mantra
by adminWe at PAL Heights Mantra organized the most awaited ‘Awadhi Rasoi’ festival between April 1st till 23rd at our Pind Da Dhaba restaurant, in order to tantalize the taste buds of our guests with the rich, flavourful and aromatic dishes of Awadhi cuisine while paying ode to the culinary heritage of Lucknow.
But first, let’s delve into the history and origin of Awadhi cuisine. This cuisine is known for its unique blend of spices and cooking techniques that have been perfected over the centuries. It is characterized by the use of rich ingredients like ghee, cream, and nuts, and an array of spices like saffron, cardamom, and cinnamon that lend a distinct aroma and taste to the dishes. The cuisine is a reflection of the opulent lifestyle of the Nawabs of Lucknow, who were known for their love for lavish feasts and extravagant dishes. From the succulent kebabs to the fragrant biryanis and the creamy kormas, every dish is a celebration of the rich culinary heritage of the region.
Overall, the festival was a roaring success with the guests savouring each of our signature Awadhi dishes, so much so that we even extended the festival by 7 extra days! Each dish was well-received by the guests, with the Awadhi Dum biryani, Zaffrani Paner tikka, Nawabi Murgh Seek & Multani Kadhai Paneer, emerging as the popular fan favourites! We witnessed more than 5000 guests during the festival, with each guest leaving us with a smile and a satisfied soul. In addition to the excellent reception of our dishes, the guests also appreciated the intricate décor at the restaurant which was inspired by the Mughal era.
Overall, the Awadhi cuisine food festival successfully managed to bring the taste of Awadh to the people of Odisha, while offering a glimpse into the opulent lifestyle of the Nawabs of Lucknow.
